Lusso Leaf uses cutting-edge technology to cultivate a range of 30-40 plants such as Radish Rambo and Red Veined Sorrel. These are harvested 10-32 days after germination once they have grown their first set of ‘true’ leaves - this is when flavour is most intense.

Sarah and Richard Kennedy constructed grow rooms operated by a bespoke IT system that uses a range of sensors to control parameters such as humidity and day length.

“We chose to work with Le Marché because they are a premium supplier and we are a premium product,” explains co-founder Sarah Kennedy. “I could see very early on that when we wanted a distributor in London these were the right people. We really pride ourselves on the freshness and quality of our product. It has to be perfect.”

This method of indoor vertical farming is highly efficient and sustainable. The yield per square metre is far higher and use of water is precisely controlled. No pesticides are required in the growing cycle and the growing medium is coconut coir and recycled wool matting.

Richard Kennedy developed IT systems to automate production. “We never press a button or turn a tap on,” explains Sarah. “We could be in Australia and see the humidity and temperature.”

Lusso Leaf are also able to grow to order in some cases - adding new plants to the range. We are now involved in selecting the seed and what is grown. It is a true partnership.

Sarah concludes: “We always focus on texture, flavour, colour and contrast. I want chefs to open the punnet and say it’s a bloody good product.”
